The Origin of tsukikoya

Rooted in a profound respect for agricultural craftsmanship, Viator Coffee tsukikoya was established with a singular vision: to bridge the gap between exceptional coffee farmers and passionate coffee lovers. Operating out of our dedicated private roastery, we see coffee not just as a beverage, but as a journey of flavors, history, and science.

Since our inception in 2012 by RUINS Co., we have continuously evolved. We started small, focusing entirely on the meticulous profiling of green beans, and have grown into a trusted name for specialty coffee. Every batch we roast is a testament to our ongoing pursuit of perfection.

Our Roasting Philosophy

At the heart of Viator Coffee is the tsukikoya roastery. We believe that roasting is a delicate balance of art and thermodynamics. It is our responsibility to honor the hard work of the farmers by unlocking the absolute best characteristics hidden within each raw bean.

We do not believe in a "one-size-fits-all" approach. Whether it is a dense, high-altitude Ethiopian heirloom or a rich Indonesian Sumatra, our roasting profiles are strictly customized. We carefully manipulate temperature and airflow to enhance natural sweetness, vibrant acidity, and complex aromatics without ever masking the coffee's true identity with smoke or char.
